We chose to roast this coffee as a bright-medium roast to preserve the delicate, high-grown character that makes Yirgacheffe so special. A lighter touch on the roast lets the coffee's natural acidity and fruit-forward complexity shine and adds a balance to bring out the coffee's full character. The result is a bright-medium roast that opens with vibrant grapefruit notes, transitions into the warm sweetness of peach cobbler, and finishes with the rich, lingering depth of dates.
